Brine + Veg Method (2%)
Chopped cauli into bite sized florets
Used pickle pipe and mason jar
Glass weights
unmeasured curry seasoning

Only took 5 days to sour nicely.
Couldn't tastes curry. Cauliflower fermenting smells HORRIFIC. The brine smells super sulphur-y. When I open the jar the whole place stinks BUT... the cauli tastes great! The kids even love it. WIN.

May 2020
Made another batch. Ooh boy it STINKS and got mushy after 1 week. Tossed it.

Tried again with 2.25% brine.
At 3 weeks not very sour and still STINKY. Putting in fermenting fridge at 50F and letting it go longer to see if it remedies itself.
At 5 weeks it is no longer horrific!! Not amazing but edible and Girl Child will eat it.
